Ingredients
- 4 soft boiled eggs
- 4 kale leaves chopped – no need to remove stalks
- 2 broccoli flowrettes – entire flowrettes chopped and stalks diced
- ¼ cup roasted almonds, roughly chopped
- 3/4 cup of “Omega sprinkle” – or make your own this is a mixture of sunflower kernels, pepitas (pumpkin seeds), sesame seeds, chia seeds.
- 1 Lebanese cucumber or 1/2 a continental cucumber chopped in to small pieces
- 50 g (1 cup) baby spinach leaves
- 1 cup freshly snow peas Julienned
- Seeds of 1/2 a pomegranate
- Salt and pepper to taste
For the dressing
- Juice of 1 lemon
- 1avocado, halved, peeled
- 250g marinated feta of your liking
What to do
- In a mixing bowl, mix kale, broccoli, cucumber, snow peas, spinach, almonds and omega sprinkle.
- In a seperate small mixing bowl, mix lemon juice, avocado, and feta, mix with a forkuntil all ingredients combined but not too smooth
- Poor dressing in to the salad mix and toss until its distributed all through
- Spoon the mixture into serving bowls then sprinkle with pomegranate seeds and topwith a soft boiled egg
- Add salt and pepper
