Fruity Easter Recipes For Kids

 

It’s time to whip out the spatula, grab the kids and get creative with some fun, fruity easter recipes! Easter is known for being one of the most sugar-filled weekends in the calendar, but it doesn’t mean you have to devour a mountain of Hot Cross Buns and chocolate all in one sitting.

Easter Bunny Pancakes

 

Pancakes are a favourite for big and little kids alike, and what better way to enjoy a (reasonably) healthy Easter breakfast than with bunny pancakes! Grab your choice of fruit and toppings, get the kids in the kitchen and let them create their own breakfast bunnies.

 

Ingredients:

  • 50g self-raising flour
  • 50g wholemeal flour
  • 2 eggs, separated
  • 150ml milk
  • 1 banana, sliced into rounds
  • Chopped fruit
  • Any extra toppings (as desired)

 

Method:

  1. Pour both self-raising and wholemeal flour into a large bowl and whisk together. Add the egg yolks and a little bit of milk, whisking to a paste. Slowly add the remaining milk and whisk until combined.
  2. Wash the whisk. In a separate bowl, whisk the egg whites until they form stiff peaks. Gently fold the egg whites into the batter until combined, being careful to keep air in the mixture.
  3. Heat a non-stick pan over a medium heat and coat it with cooking spray. Use a large spoon to add batter to the pan for the bunnies body, then add three smaller rounds for the head and feet, and two oval pancakes for the ears. If you can’t fit them all in one pan, do them in batches.
  4. Once the pancake mixture has bubbles, flip them over and allow them to cook until both sides are golden brown. Once cooked, transfer directly to a plate and position into a bunny. Place the head, ears and feet slightly under the largest pancake to form a bunny.
  5. Add banana slices for a tail and decorate with extra toppings. Eat while warm and enjoy!

 


 

No Bake Easter Fruit Tarts

 

These tarts are not only a great substitute for more traditional, unhealthy Easter treats, but they’re incredibly simple to make and your kids will have great fun decorating them too! Use your favourite seasonal fruit and get creative.

 

Ingredients:

  • 1 cup almond butter
  • ¼ cup honey
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 2 cup oats
  • ¾ cup greek yogurt
  • ¾ cup strawberries
  • ¾ cup blueberries
  • 1 banana
  • ¾ cup green grapes

 

Method:

  1. In a microwave safe bowl, add the almond butter, honey, vanilla extract and salt. Microwave for 20 seconds, then stir until smooth.
  2. Take 1 cup of oats and blend. Blend until mixture resembles flour, then set aside.
  3. Add the other cup of oats to the almond butter mixture and combine. Slowly add in oat flour until mixture thickens. Mixture should thicken until you can form a crust. Amount of oat flour required may vary.
  4. Take a small amount of the mixture and form into an oval shape, like an Easter egg. Place onto parchment paper or onto a large serving plate.
  5. Spread a layer of greek yogurt onto your Easter eggs, then top with fruit. Eat and enjoy!

 

Fruity Easter Pops

 

Getting your children to eat more fruit doesn’t have to be complicated – Just let them enjoy these Fruity Easter Pops! Using just two ingredients (fruit and yogurt), you’ll have no problem making and the whole family devouring these tasty snacks. Enjoy them for an afternoon snack, or break them out for dessert instead of chocolate!

 

Ingredients:

  • 1 kiwifruit
  • 1 mango
  • 2 strawberries
  • 1 and ½ cup yogurt
  • Sprinkles or Chocolate Hail

 

Method:

  1. Slice fruit into oval shapes. If required, use scissors to cut the excess.
  2. Line a tray with parchment paper and place fruit on it, chilling in the freezer for about an hour, or until hard.
  3. Once solid, remove from the freezer and dip halfway in yogurt. Add sprinkles on top and then return to the tray, placing in the freezer until yogurt is frozen.
  4. Once frozen, transfer to the fridge and enjoy!

 

Rabbit Fruit Salad

 

It wouldn’t be appropriate to write a list of fruity Easter recipes for kids without including a classic fruit salad. Drizzled with honey and complete with fun, Easter shapes, your kids will love creating this fun Easter snack!

 

Ingredients:

  • 200g green grapes
  • 200g red grapes
  • 150g blueberries
  • 150g strawberries
  • `1 tbsp orange juice
  • 2 tsp honey
  • 1 slice watermelon
  • 1 slice honeydew melon
  • 1 slice rock melon

 

Method:

  1. Wash and slice the grapes sideways, then place in a large bowl. Add the blueberries in as they are. Remove the tops from the strawberries, cut into quarters and add to the bowl.
  2. In a separate bowl, whisk the orange juice and honey together until combined, then pour over the fruit. Mix the fruit to ensure fruit is covered in the dressing.
  3. Using Easter-themed cookie cutters, cut Easter shapes out of the melon slices. Divide the fruit mixture between four bowls, then place Easter shapes on top. Eat and enjoy!

 

Oatmeal Peanut Butter Eggs

 

Kids generally love two things: peanut butter and getting their hands dirty. This easy oatmeal and peanut butter recipe will have the kids laughing in the kitchen, and it’s a great, healthy alternative to traditional chocolate eggs as well. All you need is a few staple ingredients and you’re ready to create!

 

Ingredients:

  • 2 ½ cups rolled oats
  • 4 tbsp peanut butter
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 5 tbsp almond milk
  • ¼ cup mini chocolate chips
  • Sprinkles (for decoration)

 

Method:

  1. In a medium bowl, mix dry ingredients together and set aside. In a large bowl, add peanut butter, maple syrup, vanilla and milk, and stir until combined.
  2. Add the dry ingredients to the mixture and combine with your hands. If you have an egg mould, add the mixture to the egg moulds and squeeze tight. If not, use your hands to mould mixture into eggs.
  3. Add sprinkles, then place in a container and let sit in the fridge for an hour. Once set, eat and enjoy!
