Tsambica’s Corn Fritters with Chilli Avocado Mash

Ingredients

Corn Fritters

  • Corn from one cob
  • 1 medium zucchini finely grated
  • 1 small red onion finely diced
  • 2 eggs slightly beaten with a fork
  • 1/4 cup buckwheat flour
  • 2 tbsps flaxseeds
  • 2 tbsps Pepitas
  • 1/2 tsp ground cumin
  • Salt and pepper to your taste

Olive oil for cooking

Chili Avocado Mash

  • 1 ripe Avocado
  • 2 tbsps finely chopped coriander
  • 1 garlic clove crushed
  • 1 bird’s eye chilli finely chopped
  • Juice of 1 lime
  • 2 tbsps olive oil
  • Salt and pepper to your taste
  • Baby Spinach Leaves, shallots and Dukkah for garnish (I like using “Dukkah Original” from “The Olive Branch”)

Method

  1. Add all ingredients for the Fritters in a mixing bowl and keep folding until well combined
  2. Heat up a nonstick frying pan over moderate heat and brush with olive oil.
  3. Cook Fritters until golden brown on both sides, 2 at a time to the shape and size of a pancake. Makes 4.
  4. Add all ingredients for the Avocado Mash in a mixing bowl until well combined.
  5. Arrange Fritters and Avocado Mash on a plate, garnish with spinach, shallots and dukkah as per picture.
  6. Makes 2 large serves or 4 small ones.
