Ingredients
Corn Fritters
- Corn from one cob
- 1 medium zucchini finely grated
- 1 small red onion finely diced
- 2 eggs slightly beaten with a fork
- 1/4 cup buckwheat flour
- 2 tbsps flaxseeds
- 2 tbsps Pepitas
- 1/2 tsp ground cumin
- Salt and pepper to your taste
Olive oil for cooking
Chili Avocado Mash
- 1 ripe Avocado
- 2 tbsps finely chopped coriander
- 1 garlic clove crushed
- 1 bird’s eye chilli finely chopped
- Juice of 1 lime
- 2 tbsps olive oil
- Salt and pepper to your taste
- Baby Spinach Leaves, shallots and Dukkah for garnish (I like using “Dukkah Original” from “The Olive Branch”)
Method
- Add all ingredients for the Fritters in a mixing bowl and keep folding until well combined
- Heat up a nonstick frying pan over moderate heat and brush with olive oil.
- Cook Fritters until golden brown on both sides, 2 at a time to the shape and size of a pancake. Makes 4.
- Add all ingredients for the Avocado Mash in a mixing bowl until well combined.
- Arrange Fritters and Avocado Mash on a plate, garnish with spinach, shallots and dukkah as per picture.
- Makes 2 large serves or 4 small ones.
